You'll usually find swordfish cut into thick fillets or steaks. The skin is rather tough and the fish has quite a strong flavor. The main thing to remember in preparing great swordfish is to not overcook it. Note that when the meat turns opaque, yet still moist within, it is done to perfection. It is an art you can master!
