Shrimp is always great to have on hand. If you can get it fresh from an oceanside seafood vendor, that's great, but for those of us not so close the ocean, you can still pick up shrimp of all quality levels. We generally opt for the larger prawns, but the smaller shrimp do just as good of a job when budget is a concern. Keep frozen shrimp that is already cooked on hand in the freezer for quick meals.
